Roanoke Island Rum Cakes is brought to life by Chef Jill Thompson, who began her culinary journey sailing in the Virgin Islands back in 2017. While working as a yacht chef, she discovered her talent for baking the perfect rum cake, which quickly became a beloved treat among locals and visitors alike.
Over the years, Jill’s rum cakes traveled with her across the West Coast and Mexico, but it was on Roanoke Island in the Outer Banks where she found her forever home. Incorporating the island's Kill Devil Silver Rum and local toppings, she crafted a unique recipe that celebrates the flavors of the coastal South.
As a dedicated mother, sailor, surfer and yoga instructor, Jill infuses each cake with love and care, ensuring they are incredibly moist and delicious. At Roanoke Island Rum Cakes, every bite tells a story of community and gratitude.
